|  madeleines This recipe 
              combines vanilla and lemon for a most delicious flavour.
 ingredients 125g of butter2 eggs
 1/2 of 
              caster sugar
 1/2t finely 
              grated lemon rind
 1 T lemon juice
 1 Tablespoon 
              vanilla essence
 3/4 cup 
              plain flour.
 method Melt butter 
              slowly then set aside to cool. Put eggs and caster sugar into a 
              small mixing bowl and beat with an electric beater until thick and 
              light (as you would for a sponge cake). Add lemon rind, lemon juice 
              and vanilla essence, then fold though flour. Add the melted butter 
              last of all. Brush the madeline tins with extra melted butter then 
              spoon in sufficient cake batter to fill each mould 3/4 of the way 
              up the side. Bake in a hot oven (200c) for 8-10 minutes until golden. 
              Remove from oven then turn out carefully. Serve dusted with icing
